Pasta Salad with Lentils

I add the pasta to the boiling water per package instructions. Then, get to some chopping. I slice one onion and cut one rib of celery into cubes. I opened a can of lentils and rinsed it with water to wash off the excess starch.

After 10 minutes of the pasta’s cooking time, I add some frozen peas and spinach to the pot. Since pasta will not be cooked in the sauce after draining, I’m looking for a fully cooked consistency, not Aldante.

I drain the mixture and start mixing in a large bowl when everything is cooked. I squeeze a lemon, add a spoonful of olive oil, and season with salt and pepper. Finally, I added a few spoons of breadcrumbs and grated parmesan. One last toss, and it’s done. I serve it with some extra parmesan and mayonnaise.
